Cook the rice stick noodles according to the package directions. Drain and rinse with cold water if desired. Set aside.<br />2. Cook the Beyond Steak Filet according to package instructions until browned and heated through. Let rest for 2 minutes, then slice against the grain into thin strips.<br />3. In a small saucepan, combine the water, brown sugar, rice vinegar, vegan fish sauce, chili flakes, garlic, ginger, soy sauce, hoisin sauce, and salt. Bring to a brief boil, whisking until the sugar dissolves.<br />4. Remove from heat and let cool slightly. Add the lime juice and sesame oil.<br />5. Blend with an immersion blender or standard blender until smooth. Cool completely before serving. Store covered in the refrigerator for up to 1 week.<br />6. In a large bowl, combine the cooked noodles, red onion, cherry tomatoes, mixed greens, Fresno chili, mint, Thai basil, cilantro, and pea shoots (if using). Add a few tablespoons of Vietnamese Salad Dressing and a pinch of kosher salt. Toss until evenly coated.<br />7. Transfer the dressed noodle salad to a serving bowl or plate. Arrange the sliced Beyond Steak Filet on top.<br />8. Garnish with toasted sunflower kernels, a squeeze of fresh lime, and extra herbs if desired.
