1 lb. Beyond Beef®

5 cloves garlic, chopped

1 fresno chili, seeded and sliced into strips

1 red bell pepper, sliced into strips 

1 bunch thai basil, stems removed

3 tbsp soy sauce

1 tbsp sugar

1 tbsp vegan fish sauce

2 tbsp neutral cooking oil, or as needed

 

White rice, cooked for serving

Baby broccoli, sauteed for serving 

Sunny-Side-Up Fried egg, for serving (skip this step to make fully plant-based)

Preparation

In a large pan (cast iron/non-stick) or wok, add your cooking oil and heat over high heat. 

To your pan, add the Beyond Beef and saute for 2 minutes or until it is broken up and crisping on the edges. 

Add in the garlic, fresno chili and bell pepper. Saute until fragrant and the peppers are browned on some edges and slightly softened. 

Add in soy sauce, vegan fish sauce, sugar and cook until sauce begins to thicken and everything is caramelized. Toss in the basil and remove from the heat.

Serve over a bowl of white rice, with sauteed vegetables and top with a fried egg.
