1 package Beyond Meatballs
1/4 cucumber, thinly sliced
1 cup cherry tomatoes, halved
1/4 cup kalamata olives, halved
1/4 cup sliced red onion
1/3 cup vegan greek yogurt or sour cream
1 cup grated, strained cucumber
1 tbsp olive oil
1 tbsp fresh dill
1/2 tbsp lemon juice
1/4 tsp salt
a small clove of garlic, minced
Mix all the Tzatziki ingredients together in a small bowl.
Next, cook the Beyond Meatballs for 7-8 min over medium heat.
While they are cooking, slice your cucumber and red onion. Half a handful of cherry tomatoes and greek olives.
To assemble, spread a generous serving of hummus on each flatbread then top with Beyond Meatballs, cucumbers, onions, tomatoes, olives and tzatziki. Garnish with fresh parsley to serve.
