2 Acorn Squash
2 tbl. Olive oil
2 cups 5-grain blend
2 cups baby arugula
¼ cup candied walnut pieces
2 red apples
¼ fresh pomegranate seeds
2 tsp. balsamic glaze
10 fresh sage herb

Cut squash in half and remove the seeds.
Drizzle both halves with one tablespoon of oil and season each half with 1 tablespoon of the spice mix.
Roast in a 350F oven for approximately 25 minutes or until tender.
Place a sauté pan on over medium heat with the remaining tablespoon of oil and add 5-grain blend, apples, walnuts, pomegranate seeds, and beyond Italian sausage.
Allow to heat through.
Divide the stuffing between the two halves and drizzle with balsamic glaze
Drop sage leaves oil on the stove for 20 seconds and allow to get crispy and use as a garnish.
*Pro Tip: The squash can be roasted ahead of time and the filling can be prepared ahead of time as well and simply placed in the oven to bake. If you want to make the stuffing to order, re-heat the squash in the oven and when warm add hot filling.
