2 Beyond Sausage® Hot Italian links
2 oz Baby Arugula
2 Eggs (vegan options available)
4 oz. Hollandaise sauce (vegan options available)
1 Tsp. Orange compound
½ Tsp. Chili spice
BEYOND SAUSAGE® Hot Italian
In a small pot warm water to slow boil.
Add the prepared hollandaise, orange compound and chili spice and gently warm.
Place Beyond Sausage® in a 350-degree oven and cook for about 8 min until sausage is golden brown. Set aside to cool.
Once sauce is cool, slice the Beyond Sausage link in half and sear in a hot pan with oil to brown the flat side of the sausage.
Poach egg in slow boiling water until softly cooked.
Lightly toast the roll.
Place bottom of roll on the plate and top with baby arugula.
Next place sausage flat side up, gently add the poached egg.
Finish with hollandaise and garnish with chives.
