2 Beyond Sausage® links (Original Brat or Hot Italian)
5-6 vegan eggs (depending on how fluffy you want it)
4 thin slices of red or white onion
2 cups baby spinach
¼ cup grated vegan parmesan
1 tsp of grapeseed oil
Salt & pepper to taste

Prepare the vegan eggs, season with salt & pepper and set aside.
In a cast-iron skillet or other oven-safe pan, sauté / grill the Beyond Sausage® links, slice the links into ¼ inch pieces and set the links aside.
In the same pan grill the onion slices whole and set aside.
Lastly, wilt the spinach and set aside
Add the tsp. of grape oil to coat the pan. Turn the heat to medium/ high and begin to place a few slices of the Beyond Sausage, a little bit of spinach and a few slices of onion into the pan.
Pour in the vegan egg and cover all the ingredients. Then add in the remaining Beyond Sausage, spinach and onion. Add the grated Parmesan to the top.
Cook everything on the stove for about 3-5 minutes to set the egg. Then pop the pan into the oven at 350 for 10-12 minutes.
Pro tip: Broil it for a few minutes to give the sop some crisp coloring.
