1 package Beyond Sausage® Hot Italian
1 red onion, halved
20 Shishito peppers
1/3 cup hot pepper relish
½ cup garlic hummus
Lemon zest/sea salt
½ tbs. olive oil
4 soft Italian rolls
BEYOND SAUSAGE® Hot Italian
Toss the red onion in olive oil. Also toss the Shishito peppers in olive oil, set aside.
In a hot cast iron grill, place Beyond Sausage® links and onion halves on and cook according to packaging, turning for even grill marks.
When sausage is almost finished, add Shishito peppers to the mix. Turn peppers on each side until blistered all around.
Transfer everything to a cutting board. Slice hot sausage in long cuts and grilled onion into thick slices. Remove stem from peppers but keep whole.
Open buns slightly and toast it on grill.
Slather the inside of the toasted bun with a scoop of garlic humus, shave lemon zest on top.
Stuff bun with peppers, sausage, onions and sprinkle with sea salt.
Top with a spoonful of hot pepper relish and enjoy!
