1 Package Beyond Burger®
2 Cups TriBlend Quinoa
1 Kabocha Squash (or Acorn Squash)
4 Tbsp White bean Hummus (or Red Beet for color)
½ Large Avocado
1 Cups Kale
½ Cup Pomegranate Seeds
Salt & Pepper
Avocado oil to drizzle
Preheat oven to 400 degrees
In a skillet, add Beyond Burger® and break it into crumble-like pieces and cook through.
Cut kabocha squash into slices and place on baking sheet
Drizzle avocado oil
Place in oven and let roast for approximately 30 minutes
In a pot, cook quinoa thoroughly.
Cut avocado slices
Assemble bowl and serve
