2 Beyond Burger® patties

½ cup cherry tomatoes, quartered

½ cup Persian cucumbers, cut into bite sized pieces

¼ cup olives, pitted and halved

¼ cup soft almond cheese, we used truffle chive and dill flavor

2-3 Tbsp. Garlic hummus, or feel free to use your favorite flavor!

1 Tbsp. fresh dill, chopped

Handful of arugula (optional)

Tzatziki (optional)

2 brioche buns or pita bread rounds


Cut tomatoes, cucumber, and olives into bite sized pieces. Place in bowl with chopped fresh dill and set aside.

Follow instructions on package, cook Beyond Burger, and remove from pan.

Toast bun or warm pita in oven preheated at 350 degrees for 5 min.

Stack burger on top of bun or inside pita. Spread hummus on burger and then top with chopped ingredients in bowl, crumbled vegan cheese, and finish with arugula if you desire.

*Optional: top burger with tzatziki and/or use as dressing for extra chopped veggies
