6 small Portobello mushrooms

1 cup Beyond Meat Beef Crumbles

¼ cup small onion, chopped

¼ cup celery, chopped

¼ cup white wine

2 leaves fresh sage, chopped

1 Tablespoon panko breadcrumbs

1 Tablespoon Parmesan cheese or nutritional yeast


  • 1. Preheat your oven to 350°. Cook onions and celery along with some sage and salt and pepper in a little bit of olive oil for about 5 minutes until they are nicely caramelized.
  • 2. Add white wine to the pan and allow the wine to evaporate for a bit before adding in Beyond Meat Beef. Stir them together, cooking for 3 minutes more.
  • 3. In a small bowl, combine equal parts breadcrumbs and Parmesan cheese.
  • 4. Wash the mushrooms and remove the stems. Fill the cavity with the Beyond Beef mixture and top with a teaspoon of the cheesy breadcrumbs.
  • 5. Bake in the oven for 25-30 minutes until the mushrooms are cooked through.
