Lightly Seasoned

1 clove garlic, minced

1 red bell pepper, diced

½ cup white onion, diced

1/3 cup Parmesan cheese or vegan substitute (we like nutritional yeast!)

1 ½ cup Beyond Meat Chicken Strips

1 14 oz. can crushed tomatoes

3 cups vegetable broth

1 T. fresh basil, chopped


Cook the garlic, bell pepper and onion together for 3 minutes.Add crushed tomatoes, Parmesan and vegetable broth to the pot. Bring to a boil.
In the meantime, tear Beyond Chicken half with your hands and add to the soup, leave on until the Beyond Chicken is heated through.
Serve garnished with chopped basil and a Parmesan Crisp.
Parmesan Crisp can be made by preheat the oven to 400°, line a baking sheet with parchment paper or a Silpat. Pile a heaping tablespoon of Parmesan and lightly pat down. Make four cheese rounds a 1/2 inch apart and check at 3 to 5 minutes until golden and crisp. Allow to cool before removing from baking sheet.
