California Veggie Pasta Bowl with Beyond Chicken

Lightly Seasoned

2 zucchini

2 small eggplant

2 Tablespoon balsamic vinegar

2 cloves garlic

½ avocado, cubed

½ yellow bell pepper, diced

½ box pasta, any shape you like

cherry tomatoes, halved

fresh basil, julienned


1. Preheat oven to 350°. Lightly coat the bottom of a baking sheet with oil and cut your zucchini and eggplant on the bias. Add ¼ teaspoon of salt directly on top of the vegetables.

2. Roast the zucchini and eggplant for 10 minutes. Flip the veggies, add
balsamic vinegar and cook for 10 minutes longer.

3. Boil water and cook the pasta. Drain and rinse the pasta and dress with 1
tablespoon of olive oil, and salt to taste.

4. In a separate pan, infuse some olive oil with 2 cloves of garlic, pressed or
finely minced, over low heat until lightly brown. Pull out the garlic from the
pan and reserve for later. Adding Beyond Chicken to the garlic infused oil and
cook for 4 minutes over medium heat.

5. Add the pasta, roasted vegetables, and Beyond Chicken to your serving bowl
along with bell pepper, avocado, and tomatoes. Finish with fresh basil strips,
lime juice over the avocado and the reserved garlic.
