Wholesome Chicken Hummus Sandwich

Lightly Seasoned
  • 2 slices whole wheat bread
  • ½ cup hummus
  • ¼ cup shredded carrots
  • A large handful alfalfa sprouts
  • 4 ¼ in. slices cucumber
  • Juice of a lemon
  • 1/3 cup Beyond Meat Chicken Strips
  • 1 T extra virgin olive oil
  • 1/8 t salt
  • 1 T vegan butter

Preparation

  1. Slice the cucumber and quickly pickle the cucumber slices with lemon juice and a little bit of salt, set aside.
  2. Mince the Beyond Chicken into small pieces by running your knife through a pile of Beyond Chicken at least 7-10 times. In a small bowl, mix in the chopped Beyond Chicken with olive oil and salt.
  3. Melt vegan butter over low-medium heat and toast two slices of bread topped with cheese until the toast is lightly browned and the cheese is melted, about 5 minutes.
  4. Spread one slice of toasted bread with hummus. Top with alfalfa sprouts, Beyond Chicken, shredded carrots and cucumber. Slice diagonally to make the sandwich easier to eat.
