1 lb Beyond Beef®
¼ cup minced onion
⅛ cup minced kalamata olives
2 tbsp minced mint
1 tbsp minced garlic
2 tsp agave nectar or honey
1 ½ tsp dried oregano
2 cups cherry tomatoes, cut in half
1 cup Persian cucumber cut in half moon
¼ cup red onion, thinly sliced
½ cup dill, freshly picked
1 tsp salt
Lemon juice, to taste
Freshly cracked black pepper, to taste
Extra virgin olive oil, as needed
Lemon herb rice (recipe below), to serve
Garlic feta (recipe below), to serve
Lemon Herb Rice:
2 cups cooked white rice, kept warm (can use microwave rice)
2 tbsp fresh dill, minced
1 tbsp lemon juice
Kosher salt, to taste
Freshly cracked black pepper, to taste
Garlic Feta:
1 lb vegan (or regular) feta cheese
¼ cup roasted garlic
1 tbsp extra virgin olive oil
1 tsp salt
