2 cups cherry tomatoes, halved
1 tbsp citrus butter (recipe below)
5 leaves mint, chopped
¼ cup Italian parsley, chopped
½ lemon, to taste

2 sticks vegan (or regular) butter, at room temperature
½ lemon, zested + 1 tbsp juice
2 tbsp agave nectar or honey
4 leaves mint, minced
1 leaf basil, minced
