Cook Up Something New with Beyond Ground

Beyond Ground Pasta
Servings: 4-5
Prep Time: 15 minutes
Cook Time: 20 minutes
Ingredients
- 1 pack thawed Beyond Ground Original
- 2 tbsp minced fresh garlic
- ½ tsp chili flakes
- 1 tbsp dry Italian seasoning (store bought)
- 1 tsp salt
- ¼ tsp cracked black pepper
- 1 lb Italian Seasoned Beyond Ground
- 2 cups dry pasta
- 1 ½ cups can crushed tomatoes (San Marzano)
- 1 tbsp tomato paste
- 2 tsp nutritional yeast
- ½ tsp white sugar
- chopped parsley
- salt and black Pepper to taste
Instructions
- Thaw Beyond Ground Original.
- Prep and measure all ingredients.
- Mix Beyond Ground Original with fresh garlic, chili flakes, dry Italian seasoning, salt and pepper, then set aside.
- In a medium saucepan, heat 2 Tbsp oil over medium heat. Add 'seasoned' Beyond Ground Original, breaking it apart, and cook for 3-4 minutes.
- Stir in tomato paste and sugar until combined.
- Add the crushed tomatoes along with 1 cup reserved pasta water. Bring to a boil, then reduce to a simmer and cook for 2 minutes. Season with additional salt and pepper to taste.
- Cook the pasta according to package directions. Reserve 1 cup of the pasta cooking water.
- In a large pan over medium-high heat, combine the butter (if using), reserved pasta water, and Italian-style ragu. Cook for 2-3 minutes, stirring to combine.
- Add the cooked pasta to the pan, toss well, and cook for 1-2 minutes.
- Season the pasta with salt and pepper to taste.
- Remove from heat, add freshly chopped parsley, toss, and serve.
Beyond Ground Chili
Servings: 6
Prep Time: 20minutes
Cook Time: 20 minutes
Ingredients
- 1 pack – Beyond Ground - thawed
- 1 tbsp, chili Spice
- ½ cup onion, diced
- 2 tbsp, garlic, minced
- 2 tbsp apple cider vinegar
- 1 cup, crushed tomatos
- ¼ cup, tomato paste
- 2 tbsp, brown sugar
- 1 tbsp, soy sauce
- 1/8 cup, worcestershire
- 2 ¼ cup, veg broth (sub water if needed)
- 1 can, kidney beans, drained
- 5 tbsp, avocado oil
- ¼ cup, ketchup (optional)
Garnish with:
- green onion, chopped
- plant-based sour cream
- shredded plant-based cheese
Chili Spice:
- 2 tsp, chili powder
- 1 ½ tsp, chipotle powder
- 1 tsp, paprika powder
- 1 tbsp, Montreal Steak Seasoning
- 1 ¼ tsp, salt, Kosher
Instructions
- Mix thawed Beyond Ground with chili spice.
- In large sauce pot heat 3 tbsp oil and brown seasoned Ground Original (careful as it can stick so continue to stir).
- Chop to break apart as it cooks, 2-3 mins (does not need to be cooked thoroughly). Remove from pan. Set aside.
- In same pan, heat 2 tbsp oil and sauté onion, garlic, until translucent 2-3 min.
- Add all dry spices and salt and stir,1 min.
- Add in tomato paste, ketchup and brown sugar and cook over medium heat stirring with spatula.
- Pour in vinegar, canned tomatoes, veg broth, soy and Worcestershire, bring to simmer 1 min.
- Add in remaining ingredients (cooked Beyond Ground and Kidney beans). Cover and simmer 15 mins. Taste and adjust salt if needed!
- Serve desired amount in bowl and garnish with chopped green onion, shredded plant based cheese and sour cream if you like.
Beyond Ground Crispy Chipotle Taco
Servings: 4
Prep Time: 25 minutes
Cook Time: 7 minutes
Ingredients
- 1 pack thawed Beyond Ground Original
- 2 tbsp, Taco Spice (sub recipe)
- 4 corn tortilla shells
- ½ cup, iceberg lettuce (shredded)
- 4 tbsp, shredded plant-based cheese
- 6 tbsp, avocado crema (sub recipe)
- 12 slices, store bought jalepeno (sliced and pickled)
- 12 leaves, cilantro
- 3 tbsp, avocado oil
Instructions
- Follow sub recipes and make avocado crema and taco spice.
- Prep and measure ingredients.
- Take a medium size non-stick pan over medium heat with plenty of oil and cook seasoned ground, breaking apart as needed to caramelize for 5 to 7 minutes.
- Unwrap shells and place on baking sheet. Bake at 325F for 6 to 7 minutes until crisp. Set aside.
- Build the tacos in this order: taco shells, seasoned Beyond Ground, shredded iceberg lettuce, shredded cheese, avocado crema, sliced jalapenos, and cilantro leaves.
- Serve and enjoy.
Avocado Crema Ingredients
- 1 cup, plant-based sour cream
- 1.5, avocado
- 1 lime
- 2 whole garlic cloves
- 1 cup, cilantro
- 1 tsp, salt
Instructions
- Prep and measure ingredients.
- Juice the lime
- Juice lime and place all ingredients into a blender until smooth
