Beyond Breakfast Sausage® with Creamy Grits and Roasted Tomatoes

6 Spicy Beyond Breakfast Sausage® patties
1 cup white instant grits
2 cloves garlic, sliced
1 tablespoon fresh thyme leaves
1/4 cup plus 1 tablespoon extra-virgin olive oil
9 ounces ripe cocktail tomatoes, stems intact, on the vine
Freshly ground pepper
Fresh parsley and basil leaves, for serving
BEYOND BREAKFAST SAUSAGE® SPICY
For Roasted Tomatoes:
Preheat oven to 325 degrees. In a shallow baking dish, combine garlic, thyme, and ¼ cup oil. Add tomatoes and toss to combine; season with ½ teaspoon salt and ¼ teaspoon pepper. Transfer to oven and bake until soft, about 40-50 minutes. Reserve oil for serving.
In a medium saucepot, bring 4 cups of water, 1 tablespoon olive oil, and 2 teaspoons salt to a boil in a medium pot over high heat. Stirring constantly, add grits in a slow, steady stream. Lower heat to maintain a rapid simmer and cook, stirring, until water is absorbed and grits are smooth, about 5-8 minutes. Remove from heat. Season to taste with salt and pepper.
In a large skillet, cook patties, from frozen, over medium-high heat until golden brown, about 2 minutes per side.
To serve, ladle grits into a shallow bowl. Top with roasted tomatoes and cooked Beyond Breakfast Sausage®. Drizzle with reserved olive oil and sprinkle with fresh herbs and freshly ground pepper.
