2 cups Beyond Beef Crumbles, Beefy
1 ½ cups frozen brown rice
1 (15-oz) can black beans, rinsed and drained
1 tbsp olive oil
2 cups chopped zucchini (2 small)
1 cup fresh or frozen, thawed corn (1 large ear)
½ tsp kosher salt, divided
½ tsp black pepper, divided
½ cup fat-free salsa
2 cups coleslaw mix
¼ cup chopped fresh cilantro
1 tbsp fresh lime juice
1 cup halved cherry tomatoes

In a medium microwave-safe bowl, combine rice and beans. Cover and microwave on High for 3 minutes or until thoroughly heated.
Meanwhile, heat a large nonstick skillet over medium-high heat. Add oil to pan and swirl to coat. Add zucchini, corn, and ¼ teaspoon each salt and pepper; sauté until crisp-tender, about 4 minutes. Remove zucchini mixture from pan.
Add Beyond Beef® Crumbles to pan and stir in salsa. Cook over medium-high heat for 5 minutes, stirring frequently.
In a medium bowl, stir together coleslaw mix, cilantro, lime juice, and remaining ¼ teaspoon each salt and pepper. Arrange about ½ cup slaw mixture, ⅔ cup rice mixture, ½ cup zucchini mixture, ½ cup crumbles mixture, and ¼ cup tomatoes in each of 4 shallow bowls.
