1 lb Beyond Beef™
2 garlic cloves
1 slice of bread, toasted until browned and soaked in water until fully tender
1 medium yellow onion, diced
½ cup fine chopped fresh parsley
Salt and pepper
1 1/2 tsp ground allspice
1/2 tsp cayenne pepper
1/2 tsp ground sumac
1/2 tsp ground nutmeg
1/2 tsp paprika
Vegan Tzatziki Sauce (ingredients below)
Vegan Tzatziki Sauce:
1 cup cucumber, grated
1 cup raw cashews
3/4 cup water
1 ½ tablespoons fresh lemon juice
2 ½ teaspoons distilled white vinegar
4 cloves garlic
1/2 teaspoon sea salt
pinch ground black pepper
2 tablespoons fresh dill
Vegan Tzatziki Instructions:
Grate the cucumber then squeeze out the excess water in a paper towel until mostly dry. Set aside.
Blend all ingredients in a food processor except the grated cucumber and dill until smooth.
Add cucumber and pulse until well incorporated.
Add dill, pulse until finely chopped.
Refrigerate to thicken.
Place Beyond Beef™ into a large mixing bowl. Add a soaked slice of bread. Add spices followed by finely chopped onion, garlic, and parsley. Mix thoroughly together with hands.
Take a fistful portion of the Beyond Beef™ mixture and mold it on to a metal skewer. Repeat the process until you have run out of meat. For best results, aim for 1-inch thickness
Lay on a tray lined with parchment paper.
Place Beyond Beef™ Skewers on a lightly oiled, heated gas grill. Grill on medium-high for 4 minutes on one side, turn over and grill for another 3-4 minutes.
Serve the Beyond Beef™ Skewers immediately with pita bread, tzatziki and fixings!
