
Beyond Breakfast Sausage® Tacos

Ingredients
1 package Beyond Breakfast Sausage® Links
1 package corn or flour tortillas
4-6 Eggs or Egg Replacer
1-2 Russet Potatoes
1 Bell Pepper
4 tbsp olive oil
Cayenne
Garlic Powder
Onion Powder
Paprika
2-3 Avocados
Cilantro
Lime
Salt & Pepper
Optional: hot sauce
Preparation
Peel and quarter potatoes. Microwave until softened, 3-4 minutes.
While potatoes cool, dice bell peppers into ¼ inch pieces and chop cilantro. Once potatoes have cooled to the touch, dice into ½ inch cubes.
Slice avocados in half & scoop into a small bowl and mash. Sprinkle with cilantro, garlic powder, salt and pepper, and a squeeze of lime juice. Gently mix and set aside.
Heat olive oil in a large skillet, add potatoes and bell pepper. Sprinkle with cayenne, garlic powder, onion powder, paprika, salt and pepper. Toss to coat. Cook for 6-10 minutes, tossing every 2-3 minutes.
While potatoes are cooking, cook Beyond Breakfast Sausage Links according to the package and scrambled eggs according to your liking.
Warm tortillas.
Place egg, potatoes, and breakfast sausage (sliced or whole) into tortillas. Top with avocado, leftover cilantro and/or hot sauce. Serve and enjoy!
